The Perfect Fall Soup
It’s officially Fall! That means all things pumpkin spice, experiencing the kaleidoscope of colors from the foliage, and wearing over-sized sweaters paired with over the knee boots. What about food? The thing that I crave most for lunch during Fall is a hot bowl of comforting soup. There’s something about that first spoonful of piping hot soup that is bursting with flavor.
Since 2021 is soon approaching, I’ve been in full planning mode and working longer hours to meet deadlines. My days are typically filled with back-to-back meetings, which leaves me little time to eat lunch. Lately, I’ve been loving the different soups from Splendid Spoon. They are freshly made and delivered straight to your door, and all you need to do is heat it up on the stove. Their soups are all vegetarian and range from light to hearty. Since I am still on a training program that focuses on muscle growth, I add my own protein into the soup. For example, pictured above is Splendid Spoon’s butternut squash ratatouille soup. I added 4 oz of air crisped chicken thigh to make it a more complete meal. I love having this option because the meat gives the soup an extra element of flavor and texture. On my carb heavy days, I like having toasted whole grain bread as a side. I also keep a few of their soups in my freezer for days when I’m low on groceries or tight on time.
