Pumpkin Overnight Oats
Every season, I like to incorporate the freshest fruit and produce the season has to offer into my recipes. For Fall, it’s everything pumpkin. I love the taste, the bright color, and it’s very festive! An easy go-to breakfast that I like to make is pumpkin overnight oats. It requires very little prep time and chances are, you already have most of the ingredients in your fridge and pantry - now you just need to buy pumpkin puree! This recipe is completely customizable, so you can use this as a base and adjust the ingredients and flavors to your liking. Overnight oats are great stored in mason jars, which makes packing easy. I like to pack these as post workout fuel after an intense workout. The recipe below yields one serving.
Ingredients:
½ cup organic rolled oats
⅓ cup plain Greek yogurt (or pumpkin yogurt)
⅔ cup unsweetened milk of choice
½ cup pumpkin puree
1 tablespoon chia seeds
1 tablespoon honey
½ tablespoon ground flax meal
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅛ teaspoon ground cloves
Pinch of salt to taste
Optional toppings: pumpkin seeds, walnuts, extra cinnamon
Instructions:
Whisk together all ingredients in a medium sized bowl. For single serve, spoon mixture into mason jars with lids ¾ of the way full.
Refrigerate preferably overnight (or for at least 4 hours).
Upon serving, sprinkle the jars with extra cinnamon, pumpkin seed, and walnuts.
